The warm, humid sea breeze from the Gulf and the cool Alpine draft from Monte Lattari were funneled down the main via from morning until dusk, drying freshly cut pasta strands hung across the street at just the right speed: slow enough to preserve the wheat's protein and flavor, fast enough to prevent spoilage. In November 1980, the Irpinia earthquake struck Campania with a magnitude of 6.9. The region rebuilt slowly.
