Italian ingredients vs. others

\n
\n \n
\n

Durum wheat is stone-milled to preserve its natural proteins. Our bronze-die extrusion creates a rough texture, allowing sauces to adhere perfectly.

\n

Slow drying for 36-72 hours at low temperatures maintains the pasta’s natural color and flavor, unlike high-temperature flash-drying methods.

\n

DiMartino spaghetti ensures an al dente texture with every boil, holding sauce better than any Teflon-extruded alternative.

\n

Choose texture and taste; choose DiMartino.

DiMartino's journey from tradition to table

\n
\n \n
\n \n

Gragnano sits in a narrow valley between the Lattari Mountains and the Gulf of Naples, and its streets were engineered in 1650, under Prince Cosimo Caracciolo, specifically to act as wind corridors. The warm, humid sea breeze from the Gulf and the cool Alpine draft from Monte Lattari were funneled down the main via from morning until dusk, drying freshly cut pasta strands hung across the street at just the right speed: slow enough to preserve the wheat's protein and flavor, fast enough to prevent spoilage. This was not a happy accident. It was deliberate infrastructure for a deliberate craft.

\n

In November 1980, the Irpinia earthquake struck Campania with a magnitude of 6.9. The region rebuilt slowly. Rather than modernize into the high-temperature flash-drying that had swept industrial pasta production, Gragnano's pastifici returned to what they had always done: bronze dies, 36-to-72-hour slow-drying, and durum semolina from the volcanic plains nearby. The discipline held. The questions buyers ask before deciding

\n \n
\n \n
Spaghetti has been a staple in Italian cuisine for centuries, originating from Naples and popularized worldwide.

Its long, thin, cylindrical shape is ideal for a variety of sauces and dishes.
\n
\n \n
\n \n
DiMartino's bronze-die extrusion creates a rough, porous surface texture that absorbs and grips sauces in ways smooth Teflon-extruded pasta cannot. The slow mountain-air drying preserves the wheat's natural sweetness and creates a firm bite that holds its shape under any sauce weight...from delicate aglio e olio to hearty ragΓΉ.
\n
\n \n
\n \n
Absolutely. The rough texture of DiMartino's spaghetti holds the cheese and pepper sauce perfectly, enhancing the dish's flavor.
\n
\n \n
\n \n
DiMartino Spaghetti cooks in 9-10 minutes to achieve the classic al dente bite prized in Italian cuisine...firm to the tooth with no chalky center. Because this pasta is bronze-cut and slow-dried, it maintains structural integrity longer than mass-produced alternatives, giving you a wider window for perfect timing. Always taste-test 1 minute before the package time.
\n
\n \n
\n \n
DiMartino's rough bronze-cut surface makes it ideal for clinging sauces like carbonara, amatriciana, and pomodoro...the micro-ridges trap emulsified fats and coat each strand evenly. Oil-based preparations like aglio e olio benefit from the pasta's porous texture, which absorbs garlic-infused oil into the strand itself rather than letting it pool at the bottom of the bowl. Even simple butter-and-cheese sauces transform because the wheat's natural sweetness, preserved through slow drying, balances rich dairy notes.
\n
\n \n
\n \n
Made in Gragnano, Italy, it uses 100% Italian durum wheat and bronze-die extrusion, offering superior texture and sauce adhesion.
\n
\n \n
\n \n
When cooked to al dente, DiMartino's spaghetti delivers a firm, springy bite with a slightly rough surface feel...the result of bronze-die extrusion and slow mountain-air drying at low temperatures. This texture resists overcooking and creates superior sauce adhesion compared to smooth Teflon-extruded pasta. The wheat's natural grain character remains present, offering a subtle nutty sweetness that mass-produced pasta loses during high-heat industrial drying.
\n
\n \n
\n \n
DiMartino Spaghetti is currently offered in a 16 oz (1 lb) box, which yields approximately 8 servings at the traditional Italian portion size of 2 oz dry pasta per person. This single-origin, small-batch pasta from Gragnano is packaged to preserve freshness and protect the delicate strands during transit.
\n

Each box is cushioned in protective material and shipped in a padded box, ensuring it arrives presentation-ready for gifting.

Durum wheat is stone-milled to preserve its natural proteins. Our bronze-die extrusion creates a rough texture, allowing sauces to adhere perfectly.

Slow drying for 36-72 hours at low temperatures maintains the pasta’s natural color and flavor, unlike high-temperature flash-drying methods.

DiMartino spaghetti ensures an al dente texture with every boil, holding sauce better than any Teflon-extruded alternative.

DiMartino's journey from tradition to table

In 2013, the European Union awarded Gragnano the IGP designation β€” Indicazione Geografica Protetta β€” legally protecting the name for pasta made only within the municipality, under these specific methods. Di Martino has been part of Gragnano since 1912. Every box carries that continuity.

Italian ingredients vs. others

In 2013, the European Union awarded Gragnano the IGP designation β€” Indicazione Geografica Protetta β€” legally protecting the name for pasta made only within the municipality, under these specific methods. Di Martino has been part of Gragnano since 1912. Every box carries that continuity.

Experience Gragnano's legacy in every bite.

The questions buyers ask before deciding

Spaghetti has been a staple in Italian cuisine for centuries, originating from Naples and popularized worldwide.

Its long, thin, cylindrical shape is ideal for a variety of sauces and dishes.
Absolutely. The rough texture of DiMartino's spaghetti holds the cheese and pepper sauce perfectly, enhancing the dish's flavor.
Made in Gragnano, Italy, it uses 100% Italian durum wheat and bronze-die extrusion, offering superior texture and sauce adhesion.
Each box is cushioned in protective material and shipped in a padded box, ensuring it arrives presentation-ready for gifting.
No nuts in this product. Made in a facility that also processes nuts ... check the label if you have a nut allergy.
Open packages should be tightly sealed and stored in a cool, dry place. Best used within a year.
