Why Mezzi Rigatoni is different

\n

(Why DiMartino's Gragnano production makes this pasta extraordinary)

\n
\n \n
\n

GRAGNANO, ITALY

\n

The unique climate and rich tradition of Gragnano imbue the pasta with unmatched flavor and texture.

\n
\n \n
\n

BRONZE-DIE

\n

Creates a rough texture that holds sauces better than the smooth surfaces from Teflon dies.

\n
\n \n
\n

ROBUST TEXTURE

\n

The high protein content of the durum wheat ensures a firm, 'al dente' finish.

Timeline of DiMartino's pasta-making heritage.

\n
\n \n
\n \n

Gragnano sits in a narrow valley between the Lattari Mountains and the Gulf of Naples, and its streets were engineered in 1650, under Prince Cosimo Caracciolo, specifically to act as wind corridors. The warm, humid sea breeze from the Gulf and the cool Alpine draft from Monte Lattari were funneled down the main via from morning until dusk, drying freshly cut pasta strands hung across the street at just the right speed: slow enough to preserve the wheat's protein and flavor, fast enough to prevent spoilage. This was not a happy accident. It was deliberate infrastructure for a deliberate craft.

\n

In November 1980, the Irpinia earthquake struck Campania with a magnitude of 6.9. The region rebuilt slowly. Rather than modernize into the high-temperature flash-drying that had swept industrial pasta production, Gragnano's pastifici returned to what they had always done: bronze dies, 36-to-72-hour slow-drying, and durum semolina from the volcanic plains nearby. The discipline held. In 2013, the European Union awarded Gragnano the IGP designation β€” Indicazione Geografica Protetta β€” legally protecting the name for pasta made only within the municipality, under these specific methods. Di Martino has been part of Gragnano since 1912. Every box carries that continuity.

\n \n

DiMartino pasta is a piece of Italian history in every bite.

Yes, this pasta carries PGI (Protected Geographical Indication) certification, which guarantees it's authentic Pasta di Gragnano...made in the designated region using traditional methods. DiMartino uses traditional bronze-die extrusion, which creates a rough, porous surface that grips sauce instead of letting it slide off. Timeline of DiMartino's pasta-making heritage.

DiMartino pasta is a piece of Italian history in every bite.

Timeline of DiMartino's pasta-making heritage.

DiMartino pasta is a piece of Italian history in every bite.

The questions buyers ask before deciding

Absolutely! Its robust texture holds up well in oven-baked dishes, making it ideal for dishes like baked ziti.
Mezzi Rigatoni pairs beautifully with hearty meat sauces, like ragΓΉ or sausage, due to its ridged texture.
While it can be used in soups, its thickness makes it better suited for robust sauces and baked dishes.
This pasta contains no nut ingredients. However, it is produced in a facility that also processes tree nuts and peanuts, so cross-contact is possible. If you have a severe nut allergy, please review the package label carefully or contact us for detailed allergen protocols.
This pasta is both sourced and handcrafted in Gragnano, a hillside town in Campania famous for its mountain air and unique microclimate. The combination of local durum wheat, bronze dies, and slow drying in the Gulf of Naples breeze creates a texture and flavor you simply can't replicate elsewhere...protected by PGI certification to ensure authenticity.
Open packages should be consumed within 5-7 days when stored properly in a cool, dry place.
Yes! We offer a subscription service for regular deliveries. Enjoy a 10% discount with each subscription purchase.
Each box is individually cushioned with protective inserts and sealed to prevent movement during transit, so the pasta arrives intact and ready to gift or store. We've designed our packaging to handle the rigors of cross-country shipping while maintaining a premium unboxing experience.
Yes, this pasta carries PGI (Protected Geographical Indication) certification, which guarantees it's authentic Pasta di Gragnano...made in the designated region using traditional methods. This isn't just a label; it's legal proof that the pasta was bronze-cut, slow-dried, and crafted from Campanian durum wheat in its historic birthplace, not mass-produced elsewhere and rebranded.
DiMartino uses traditional bronze-die extrusion, which creates a rough, porous surface that grips sauce instead of letting it slide off. Unlike Teflon-extruded industrial pasta (which is smooth and slick) or brands that claim "artisanal" while blending wheat from multiple countries, every batch is small-run, single-origin Campanian grain, slow-dried at low temperatures to preserve the wheat's natural sweetness and structural integrity.
