The warm, humid sea breeze from the Gulf and the cool Alpine draft from Monte Lattari were funneled down the main via from morning until dusk, drying freshly cut pasta strands hung across the street at just the right speed: slow enough to preserve the wheat's protein and flavor, fast enough to prevent spoilage. In November 1980, the Irpinia earthquake struck Campania with a magnitude of 6.9. The region rebuilt slowly. Rather than modernize into the high-temperature flash-drying that had swept industrial pasta production, Gragnano's pastifici returned to what they had always done: bronze dies, 36-to-72-hour slow-drying, and durum semolina from the volcanic plains nearby. The discipline held. In 2013, the European Union awarded Gragnano the IGP designation — Indicazione Geografica Protetta — legally protecting the name for pasta made only within the municipality, under these specific methods.
