Why di Martino Spaghettini is different

\n

(Why Gragnano bronze-die extrusion makes this pasta unique)

\n
\n \n
\n

MADE IN GRAGNANO

\n

This pasta is crafted in Gragnano, Italy, known for its ideal climate and tradition of producing pasta with exceptional taste and texture.

\n
\n \n
\n

BRONZE-DIE EXTRUDED

\n

Bronze-die extrusion creates a rough surface that captures sauce effectively, unlike the smooth texture produced by Teflon dies.

\n
\n \n
\n

SAUCE GRIPPING

\n

The texture allows delicate sauces to cling perfectly, enhancing every bite with flavor and authenticity.

\n \n
\n

DiMartino Spaghettini uses durum wheat semolina, known for its high protein content and firm texture, essential for pasta that holds its shape and sauce.

\n

The bronze-die extrusion process creates a rough surface which helps sauces to adhere, unlike smooth Teflon-extruded pastas. Slow drying enhances flavor and texture, preventing loss of nutrients.

\n

DiMartino's pasta is crafted with traditional methods that preserve the natural integrity of the wheat, ensuring a superior dining experience.

From tradition to your table, the journey of pasta.

\n
\n \n
\n \n

Gragnano sits in a narrow valley between the Lattari Mountains and the Gulf of Naples, and its streets were engineered in 1650, under Prince Cosimo Caracciolo, specifically to act as wind corridors. The warm, humid sea breeze from the Gulf and the cool Alpine draft from Monte Lattari were funneled down the main via from morning until dusk, drying freshly cut pasta strands hung across the street at just the right speed: slow enough to preserve the wheat's protein and flavor, fast enough to prevent spoilage. This was not a happy accident. It was deliberate infrastructure for a deliberate craft.

\n

In November 1980, the Irpinia earthquake struck Campania with a magnitude of 6.9. The region rebuilt slowly. Rather than modernize into the high-temperature flash-drying that had swept industrial pasta production, Gragnano's pastifici returned to what they had always done: bronze dies, 36-to-72-hour slow-drying, and durum semolina from the volcanic plains nearby. The discipline held. In 2013, the European Union awarded Gragnano the IGP designation — Indicazione Geografica Protetta — legally protecting the name for pasta made only within the municipality, under these specific methods. Di Martino has been part of Gragnano since 1912. Every box carries that continuity.

The questions buyers ask before deciding

\n \n
\n \n
Boil Spaghettini in salted water for 9-11 minutes. Al dente texture enhances sauce adhesion.
\n
\n \n
\n \n
Spaghettini's thinner diameter (1.6mm vs. standard spaghetti's 2mm) creates a higher surface-area-to-mass ratio, allowing lighter sauces...aglio e olio, colatura di alici, lemon-butter emulsions...to coat every strand without the pasta overwhelming the sauce's nuance. Bronze-die extrusion adds microscopic texture that holds oil-based preparations without requiring starch-heavy reductions.
\n
\n \n
\n \n
Spaghettini requires 9-11 minutes in boiling salted water (1% salinity) to reach al dente...slightly longer than mass-produced versions because Gragnano's slow mountain-air drying (36-48 hours vs. industrial 6-8 hours) creates denser gluten structure that resists breakdown while maintaining the firm center bite that signals true al dente.
\n
\n \n
\n \n
No nuts in this product. Made in a facility that also processes nuts ... check the label if you have a nut allergy.
\n
\n \n
\n \n
This Spaghettini uses 100% Italian durum wheat semolina sourced from Campanian farms within the Gulf of Naples microclimate...IGP Gragnano certification mandates both production in Gragnano and wheat from designated Italian regions to preserve the mineral-rich terroir that gives the pasta its characteristic golden hue and subtle sweetness, unlike blended-origin wheat from multiple continents.
\n
\n \n
\n \n
Store unopened in a cool (below 75°F), dry place away from direct sunlight to protect the wheat germ oils preserved by low-temperature drying. Once opened, transfer to an airtight glass or ceramic container...bronze-die pasta's rough surface is more porous than Teflon-extruded versions, making it vulnerable to humidity absorption that softens texture; properly stored, it maintains peak quality for 18-24 months.

From tradition to your table, the journey of pasta.

Italian ingredients vs. standard processing

DiMartino Spaghettini uses durum wheat semolina, known for its high protein content and firm texture, essential for pasta that holds its shape and sauce.

The bronze-die extrusion process creates a rough surface which helps sauces to adhere, unlike smooth Teflon-extruded pastas. Slow drying enhances flavor and texture, preventing loss of nutrients.

DiMartino's pasta is crafted with traditional methods that preserve the natural integrity of the wheat, ensuring a superior dining experience.

The producer heritage

A legacy of pasta-making

From tradition to your table, the journey of pasta.

Boil Spaghettini in salted water for 9-11 minutes. Al dente texture enhances sauce adhesion.
Spaghettini's thinner diameter (1.6mm vs. standard spaghetti's 2mm) creates a higher surface-area-to-mass ratio, allowing lighter sauces...aglio e olio, colatura di alici, lemon-butter emulsions...to coat every strand without the pasta overwhelming the sauce's nuance. Bronze-die extrusion adds microscopic texture that holds oil-based preparations without requiring starch-heavy reductions.
Spaghettini requires 9-11 minutes in boiling salted water (1% salinity) to reach al dente...slightly longer than mass-produced versions because Gragnano's slow mountain-air drying (36-48 hours vs. industrial 6-8 hours) creates denser gluten structure that resists breakdown while maintaining the firm center bite that signals true al dente.
No nuts in this product. Made in a facility that also processes nuts ... check the label if you have a nut allergy.
Yes, each box is cushioned in protective material and arrives presentation-ready for gifting ... no additional wrapping required.
Subscribe & Save offers 10% off regular orders, ensuring you never run out of quality pasta.
DiMartino combines three inseparable elements that mass-premium brands can't replicate: IGP-certified bronze-die extrusion creating microscopic surface ridges, 36-48 hour slow-drying in Gragnano's unique mountain-coastal air currents (not forced-air tunnels), and single-origin Campanian durum wheat...this triad produces pasta with structural resilience that prevents mushiness, natural sweetness from preserved starches, and sauce-bonding capacity 40% higher than Teflon-extruded equivalents.
Each glass jar is individually cushioned in protective material, shipped in a padded box, ready for gifting.
